Olos and Olos Market have opened on the rooftop and ground floor of the Embassy Suites by Hilton Chattanooga Downtown. The new dual-concept space aims to offer Chattanooga residents an international dining and market experience.
Why it matters
The venue was developed to bring authentic Mediterranean culinary traditions and specialty ingredients to the neighborhood. This project involved extensive research, with the culinary team traveling for four years to train with chefs across Spain, Greece, Italy, and Turkey.
Olos features 118 seats, while the ground-floor Olos Market offers 88 seats and stocks several hundred imported ingredients. Both spaces are connected by a private elevator.

Vision Hospitality Group
This organization partnered with SquareOne to facilitate the development of the new dining space.
The details
Developed and operated by SquareOne in partnership with Vision Hospitality Group, the locations serve lunch and dinner on weekdays from 11 a.m. to midnight. A private elevator allows guests to move between the rooftop restaurant and the market without navigating the hotel lobby.

Grab-and-go breakfast is available on weekdays from 7 a.m. to 10 a.m.

Culture Shift
This project follows the boutique hotel restaurant integration trend by prioritizing experiential, destination-worthy dining over traditional hotel food service. The focus on regional techniques and imported goods reflects a shift toward specialized, authentic dining experiences.
Residents can now access international ingredients at the market or dine at the rooftop location without entering the hotel lobby. The establishment provides consistent meal service options, including weekday breakfast and weekend brunch.
